I saw this online a while back and love it! It is one of my favorite low calorie*, evening snacks. Simple to fix and is quite yummy!

Here’s the ingredients and prep:

1 Bowl:

1 tablespoon of your favorite peanut butter – I use creamy:

Microwave the PB for about 20-25 seconds, then stir:

1 cup of your favorite chocolate pudding cup. I’ve been using the one below, but sometimes use sugar free.

Add the pudding cup to the melted PB:

Mix thoroughly, then enjoy!

*Calories: 215 as prepped above – 155 using sugar free pudding (PB is ~95 per T).

  • Today’s session: 4 mile Tempo run
  • Comments: Nice run and good tempo. I avoided looking at my watch this morning and still achieved a consistent tempo: 8:54, 9:13, 9:03, & 9:11.

A Cave And A Memory

The Cave

When I started running, Karen asked if I was going to get “one of those headlight things.”  My response, “Pffft, yeah right!”

I caved, got one, and really like it.

The Memory

See’s peanut brittle was one of my dad’s favorite Christmas time treats – a close second was old fashioned hard candy (that pretty much ending up sticking together in a single mass as the season progressed.)

I bought us a box the other day, kind of in remembrance.  Some of us used to get in trouble for eating most of “his” box. 🙂


Training Journal – 12/15/11:

  • Current plan: 10K Training
  • Today’s session: 5 mi Tempo Run
  • Comments: Good run.  Stayed pretty much on tempo with the planned pace (±30 sec, though pacing was upside down from where it should be.)  There was a light drizzle so I gave my light wind/rain jacket a test.

I heard the following over the past week:

  • Did you have weight loss surgery?
  • You need to start eating some of those exercise calories.
  • You mean you still eat?
  • You’re a jerk!

To which I responded:

  • Nope, all natural, 2-year effort. (not that surgery isn’t a viable option for some…)
  • OK Doctor, I’ll start doing that…
  • Yes – at least 5 times a day!
  • OK, I didn’t really hear this, but someone probably thought it, ’cause sometimes i am…

  • Comments: Slept in ’til 0500 0515 0530! [i paid a price though by having to deal with late-morning, diminished-quality drivers. I know I’m not offending anyone here, since only the best drivers frequent this blog…]

Lobter

At first I thought, “Poor letter ‘S’…”

But a quick check of Urban Dictionary made me ponder:

lobter [läb-stər]

Lobter is the essence of all life and all that is good.

Lobter is classified as a noun usually, but at times can be used as an exclamation:

lobter: Mmmmmm

“LOBTER! I STUBBED MY TOE!!  LOBTER, it hurts..”

Quick Banana Cobbler

I saw this recipe on MapMyFITNESS.com. It was pretty good and I can just imagine the possible variations.

Quick Banana Cobbler

Makes 2 servings*, total prep + cook time: 30 minutes

– 1 large banana, sliced thick
– ½ c granola (I used Kashi GOLEAN, Honey Almond Flax Crunch cereal)
– 1 T brown sugar
– 1 T butter
– 1/4 cup milk
– Cinnamon, to taste

Preheat oven to 400°.

– Melt butter, brown sugar, and cinnamon in a medium saucepan.
– Stir in sliced bananas and coat thoroughly with the brown sugar mixture.
– Stir in your favorite granola and milk.
– Mix thoroughly and transfer to an oven-safe baking dish or ramekins.

Bake for 20-25 minutes.

*I enjoyed the whole thing! Topped with 2T of lite whipped topping, I calculate at 422 calories.

I splurged and had dinner at Max Brenner, Chocolate by the Bald Man last night…

Result: Happy Tummy.

  • Dinner: Mini Philly Sliders

  • Dessert: Chocolate Chunks Pizza – “THE WORKS” (half order, of course!)

Definitly have to take Karen there next time we are in Vegas!
